This Doctor Specializes in Gut Health—Here's What He Eats in a Day

If you keep up with the health and wellness world, you've likely noticed the fixation on gut health and inflammation. In short, gut health is about balancing the bacteria in your stomach to aid digestion, alleviate bloating and abdominal pain, and reduce inflammation in your stomach. While probiotic supplements are a popular fix, what you eat obviously plays an instrumental role in determining your gut health—so much so that doctor Vincent Pedre, MD, wrote and entire book about it.


"I believe in the incredible power food has to heal the body," writes Pedre for Mindbodygreen. "The elements of my integrated philosophy are threefold: Eat organic, eat the rainbow, and eat mindfully." Obviously, he tries to lead by example, only eating what he knows will have a positive effect on his digestion and overall health. Below, read up on what Pedre eats in a typical day:


To "wake up" his digestive system, Pedre starts with a cup of warm water with lemon promptly at 7:30 a.m. Next, he prepares a blue ginger breakfast smoothie, which usually contains a combination of frozen blueberries, Brazil nuts, chlorella, spinach, ginger, coconut oil, almond milk, and protein powder. Finally, he rounds out his morning with a fresh green juice from Juice Press around 11 a.m.


At 12 p.m, he enjoys his go-to snack of hummus with crackers and celery sticks while he prepares his lunch. Around 1:45 pm, he enjoys his homemade reinvented Cuban "picadillo," consisting of hormone- and antibiotic-free ground turkey and steamed butternut squash mixed with sweet baby greens, avocado, and homemade scallion vinaigrette.


Pedre typically eats out for dinner, sticking to the restaurants where he knows he can order according to his health plan. Today, it's roasted Brussels sprouts with chopped walnuts and scallions, a mixed green salad with watermelon radishes and carrot-ginger dressing, and a yellowtail scallion roll with brown rice and an assortment of sashimi. Later, around 10:30 p.m, he indulges in what he calls "apple cookies," which are essentially sliced apples with almond butter and chopped walnuts, almonds, or pumpkin seeds.
